Brentwood B-WH30L 12-Inch 4.2-Quart 3-Ply Hybrid Non-Stick Stainless Steel Wok

At a Glance

  • What it is: A 12-inch, 4.2-quart flat-bottomed wok with a hybrid laser-etched non-stick surface and a tempered glass lid
  • Key spec: Induction ready, oven safe to 570°F, metal-utensil safe
  • The differentiator: 4.2 quarts of sloped volume - you can actually toss food in this pan without redecorating the hob
  • Build: 3-ply stainless with an aluminium core, riveted stay-cool handle, tempered glass lid included
  • ⚠ Before you buy: This is a flat-bottomed Western wok, not a round-bottomed carbon-steel wok. It will not develop a patina and it does not take a wok ring.

Brentwood's B-WH30L is a wok for a Western kitchen and it is honest about that. The bottom is flat, so it sits on a household hob - gas, electric, ceramic or induction - instead of wobbling on a ring. The sides are high and sloped, so 4.2 quarts of vegetables can actually be tossed. And the laser-etched hybrid surface means the pan browns like steel, releases like non-stick, and shrugs off a metal spatula. The tempered glass lid turns it into a braising pan and a steamer.

Key Features

  • 4.2 quarts of usable volume: High sloped sides mean you can toss and stir without losing half the dinner to the cooktop
  • Hybrid laser-etched surface: Stainless ridges sear, non-stick valleys release. Fried rice does not weld itself to the pan
  • Metal-utensil safe: Use a metal wok spatula, which is what a wok wants
  • Flat bottom, induction ready: It sits flat and heats fully on gas, electric, ceramic, halogen, infrared and induction
  • Tempered glass lid included: Turn it into a braiser or a steamer, and watch what is happening under the lid
  • 3-ply construction: Even heat to the rim and no warping
  • Oven safe to 570°F: Finish a dish under high heat

Before You Buy

The honest limits, so this arrives as the product you pictured.

  • Flat bottom, not round: This is a Western wok. It sits on your hob and works, but it will never do what a round-bottomed carbon-steel wok on a jet burner does. If you want patina and true wok hei, buy carbon steel
  • Non-stick has a heat ceiling: Cook on medium-high and never preheat it empty. Blasting a non-stick pan dry on maximum heat destroys the coating
  • Keep the glass lid out of the oven: The wok is rated to 570°F; the lid is not
  • It is a PTFE-family coating: PFOA free, and Brentwood publishes the full chemistry

Frequently Asked Questions

Is this a real wok?
It is a flat-bottomed Western wok. It has the sloped sides and the volume, and it works on a normal hob including induction. It is not a round-bottomed carbon-steel wok and it will not build a seasoned patina.

Can I use it on induction?
Yes. The flat 3-ply base is magnetic and induction ready.

Can I use a metal wok spatula?
Yes. The laser-etched stainless ridges protect the coating from metal.

How hot can I run it?
Cook on medium-high. Non-stick coatings should not be blasted dry on maximum heat, so add oil before it gets hot. The pan itself is oven safe to 570°F.

Does the lid go in the oven?
No. The wok is oven safe; the tempered glass lid is not.

Care & Use
  • Add oil before the pan is hot. Never preheat empty on high.
  • Cook on medium-high rather than maximum.
  • Dishwasher safe; hand washing extends coating life.
  • Metal utensils are fine. Metal scouring pads are not.
  • The tempered glass lid is not oven safe.
